Flash-pasteurized using an in-line procedure, which heats the juice for a few seconds prior to fermentation. Fermentation proceeds very slowly over one month at cool temperatures, ensuring that the aromas are retained in the fermenting wine. Delicate straw gold. Aromas of dried fruit and herbs. Light and refreshing, with flavors of tropical fruits, anise and pear.
